Naturalmente ben si adatta anche al pesce, in questo caso il pescespada.
Sicuramente ne esistono tante varianti (l'origine credo sia napoletana) .... io, questo sughetto, lo preparo così: olio, aglio, pomodorini, capperi, origano, sale q.b.
Prima preparo il sughetto facendo soffriggere, leggermente, qualche spicchio d'aglio nell'olio; poi aggiungo i pomodorini tagliati a pezzetti, pizzico di sale, lascio cuocere per un po', aggiungo una manciata di capperi ed una bella spolverata di origano.
Poi adagio sopra il sughetto le fette di pescespada; a coperchio chiuso lascio cuocere per circa quattro minuti. Rigiro le fette, pizzico di sale, e via con altri quattro minuti di cottura, sempre a coperchio chiuso.
Diciamo che la durata della cottura dipende dallo spessore delle fette.
L'importante è non farlo cuocere a lungo, altrimenti, il pescespada potrebbe risultare un po' stopposo.
Il sughetto è buonissimo per condirci la pasta!!! ;)
